Collagen Mushroom Soup

Add collagen to your favorite recipe. Have you tried adding collagen to your soup?
Collagen Mushroom Soup
Serves 2
Preparation: 5-10 minutes
Cooking time 25 minutes

Ingredients
• 1 tablespoon of butter
• 1/2 a cup of chopped onions
• 4 cloves of minced garlic
• 2 sprigs of thyme on the stem
• 3 cups of roughly chopped mushrooms of your choice
• 1 cup vegetable stock
• 1 cup of water
• 1/3 can of coconut milk
• 2 heaped tablespoons of marine collagen
• Himalayan salt and black pepper to taste
Heat your butter in a large pot over medium heat.
Add onions, garlic and season well.
Add in thyme and stir gently
Add in the chopped mushroom
Let this simmer very gently for approximately 5 minutes
Add stock and water.
Cook for a further 20 minutes
Pour into a blender and pulse until creamy and smooth.
Stir in the coconut milk and collagen.
Enjoy!
